Huevos Rancheros

Ingredients
tostada shells
2 cups enchilada sauce
1 can refried beans(i prefer refried black beans)
eggs pan fried, sunny side up
1 each avocado peeled and sliced

alternate sauce:
4 slices bacon chopped
2 cups onion diced
1 each jalapeno seeded and minced
2 cups tomato fresh or canned, chopped
1 teaspoon lemon zest
1 teaspoon lemon juice
1 teaspoon cumin powder
1 teaspoon mexican oregano
1/4 cup water

Directions
In skillet, heat oil (take some fat from the bacon) to very hot, and fry tortillas for 1 minute on each side. Put each tortilla on its serving plate, keep hot.

Add jalapeno and onions, stir 30 seconds. Then add cumin, tomato, lemon zest and water.
Reduce heat to low and simmer, stirring occasionally, and mashing down the tomato for 20 minutes.

With 5 minutes to go use non-stick or lightly oiled pan to cook eggs sunny side up(yolks should run.

Stir in lemon juice.

On each serving dish, place 1 or 2 tortillas, top with 2 eggs and cover with sauce.

***The refried beans may be warmed and mounded on plate under the tortillas. Serve with a couple slices avocado

Serving Ideas: Serve with a crunchy julienne of peeled Jicama dressed with lime juice,salt and cayenne and a little fresh cilantro to round it out. Sliced radishes would also be yummy and appropriate here.
